There isn’t anything like a light dinner. Earlier in the day I had about a 3 oz of chicken. I just drew tired of meat by the time dinner came, so I fixed okra, French style green beans with portobello mushrooms, and fried green tomatoes.
The French style green beans were the easiest since they came from a frozen bag. Then I used olive oil to sauté them. The okra was just cut on both ends and placed in water with a quick dash of salt. Then, there were the green tomatoes.
Fried Green Tomatoes
2 green tomatoes
1/4 cup of coconut oil
1/2 cup of all purpose flour (I have gluten free in the house.)
1/8 cup of ground corn meal (the fine kind- gluten free)
A dash of salt
1/4 tsp of pepper.
Heat the coconut oil on medium heat.
Cut the tomatoes in 1/4th in slices.
Mix the dry mixture together (all purpose flour, corn meal, salt, pepper)
Rinse the tomato slices.
Place each slice in the dry mixture, then place each slice in the oil and cook about 4 minutes, then flip the slice and cook this side for about 2 minutes
OPTIONAL: Add sprinkle of salt to taste.
