Meetings, meetings, meeting… Often in our busy day we have many meetings and items to complete in a day. However, what is most important is preparation of how we will fuel ourselves throughout that day that is tagged as an extensive meeting day. I like to prepare my lunches when I have one of those days, but last week I didn’t! So what is a woman to do with just 25 minutes before the meeting start time?
I rushed to the grocery store, did my breakfast and lunch shopping in 15 minutes. At 7:30AM, there aren’t many people in the grocery store; however, the arched restaurant’s line was very long. Had to pass it to get to the grocery store.
May this salad be an impetus for someone who wants something healthy, not too heavy, easy to fix and quick to make.
Blueberry Chicken Salad
1 bag of Mixed Salad Greens (carrots, radishes and cabbage)
1 small container of blueberries
1 small bag of ready to serve grilled chicken
Tomato Basil Mrs. Dash
Apple Cider Vinegar
(I keep this on me in a small container.)
The place where my meeting was has a small kitchen where I could WASH the bag of mixed garden greens. Keep that in mind if you buy one of those bags or you can buy an extra water bottle (large) and do a rinse that way.
