Vegatable Egg Casserole (Frittata)

Yum Yum!  Eggs are a really good source of protein, and when you put vegetables with it, they can become a wonderful meal.  On one of my Saturday mornings, I really wanted to have something different.  Some people call it a frittata, I called it a casserole, because it reminds me of the types of casseroles you make when you are putting everything in the pot and put it in the oven for a good meal.


  • 1/3 cup onions
  • 1/3 cup green peppers
  • 1/3 eggplant
  • 1/3 spinach
  • 1/3 broccoli
  • 1/3 tomato
  • 1/3mushrooms
  • two slices of Swiss Cheese (optional)
  • 1/8 cup Olive Oil

Pre-heat oven to broil setting.

IMG_1976[1]Cut all vegetables (fine/medium) in pieces place in a pan to sauté until the onions are clear.  In a bowl, beat four eggs and place in the egg batter cayenne pepper, Mrs. Dash (Italian herb or table blend), basil leaves, pepper, and the small cut pieces of Swiss cheese.

Fold the cooked vegetables in the egg batter and pour egg mixture into pan and stir with spatula. Cook for 4 to 5 minutes or until the egg mixture has set on the bottom and begins to set up on top. Place the pan into the oven for 3 to 4 minutes.
